Can you roast carrots for a puree?

Roast carrots are delicious but can not be substituted for steamed ones as the flavour is quite different . ..and roasted cauliflower is just nasty. You can always boil instead of seaming, it is not as healthy and may reduce the flavour very slightly, but the losses are very small. prepare and cut your vegetables into chunks then add to a pan of lightly salted, boiling water and bring it back to the boil for fifteen to twenty minutes for the carrots and ten to fifteen for the cauliflower. As soon as you are happy with the textures take the pans of the heat and drain the vegetables, then use them as you like.
